I know everyone has their own story and situation through this COVID-19 situation. In our house we have been trying to work full-time from home while virtual schooling our son. Let me tell you, sometimes our house feels pretty small…even though it’s not haha! One of the things we had to adjust to the most was lunch time. We got sick of sandwiches pretty quickly. However, given that we are both trying to work as well, we don’t have time to make elaborate lunches. We need easy lunch recipes.
Now, I will be the first to say, these aren’t the healthiest options. They aren’t Vegan or “Whole Food.” These are just ways our family is getting by in this crazy world right now. And I think that is ok. Families need to do what is best for them in this situation. Once summer break rolls around and we aren’t virtual schooling anymore, I hope to reset our list of recipes. I do try to have fresh fruits and veggies on hand to eat for sides with all of these meals. So here is the list of recipes we have been using.

Pizza Quesadillas – from MK Creations
This easy lunch recipe combines two great foods: pizza and quesadillas. What more could you ask for?! They are super simple to make and don’t require a lot of ingredients.
Pigs in a Blanket – from Taste of Home
The ever classic pigs in a blanket. An oldie but a goodie. Little MK loves pigs in a blanket. We also like to switch things up and stuff the crescent rolls with ham and cheese. Here is a recipe for that option from Recipes Simple.
Chicken Pot Pie Muffins – from Sunny Slide Up
Chicken pot pie is a great comfort food! I like to cook chicken ahead of time during the weekend. If you bake it in the oven with a tinfoil cover, it always comes out great. I shred it and use the chicken in various recipes throughout the week. This chicken pot pie recipe is one of them. It is a great easy lunch! You can also use the shredded chicken to make taco meat for tacos or nachos. I just mix some salsa and cumin in.
Taco Puffs – from I Wash You Dry
Speaking of tacos…this recipe admittedly takes the longest but it is our favorite one of the bunch. You take refrigerated pizza dough, cut in into pieces and stuff it with cheese and taco meat. YUM!! We serve with salsa for dipping.
Mini Corn Dog Muffins
Last but not least, mini corn dog muffins. These are another one of Little MK’s favorites! We make them with turkey hot dogs. Another option to make these healthier, is to make your cornbread from scratch. Here is a recipe for that from Hip2Save.
